I love blueberries, especially the wild blueberries and wanted to make a baked french toast, so I adapted a recipe I had for regular french toast and it came out beautifully.

Ingredients For healthy, baked blueberry french toast

  • 1
    loaf thick whole wheat bread
  • 1-1/2 c
    frozen or fresh blueberries, i used wild blueberries
  • 1/2 c
    toasted, sliced almonds
  • 1/2 c
    low-fat cottage cheese
  • 2 c
    egg substitute
  • 2 Tbsp
    sugar
  • 2-1/2 c
    fat-free milk
  • 1-1/4 tsp
    vanilla

How To Make healthy, baked blueberry french toast

    Lightly spray a 9" x 13" baking pan w/ cooking spray. Heat oven to 375. Tear bread into 1" cubes. In bowl, mix bread, blueberries and almonds. Spread evenly into pan.

    In lg bowl, beat cream cheese until smooth. Blend in egg substitute and milk. Mix in sugar and vanilla. Pour over bread mix. Cover and let stand 1 hr.

    Cover w/ foil and bake 20 mins. Remove foil and bake another 20 mins or until golden. Sreve w/ butter and syrup if desired.
