apple-bacon filled pancakes w/ cider syrup

I made these last weekend for my fussy grandkids and they loved them, especially the syrup! Give this recipe a try some weekend, you'll fall in love too!

Ingredients For apple-bacon filled pancakes w/ cider syrup

  • 1/2 tsp
    oil, i used vegetable oil
  • 1/2 c
    apple cider
  • 3 Tbsp
    packed light brown sugar
  • 1-1/2 tsp
    lemon juice
  • 1-1/2 tsp
    cornstarch
  • 1/2 c
    whole wheat pastry flour
  • 1/4 c
    plus 2 tbsp white flour
  • 1 tsp
    baking powder
  • 1/4 tsp
    baking soda
  • 1 lg
    egg
  • 1 lg
    egg white
  • 1/2 c
    low fat buttermilk
  • 1 lg
    apple, peeled, diced
  • 4 slice
    center cut bacon, cooked, cooled and crumbled

How To Make apple-bacon filled pancakes w/ cider syrup

    In small pan, over medium heat, combine cider, 2 tbsp brown sugar, lemon juice and cornstarch. Bring to a boil, whisking constantly until thickened. Set aside.

    In medium bowl, combine whole wheat flour, white flour, baking powder, baking soda and 1 tbsp brown sugar, mix to combine. In lg bowl, Whisk egg, egg white and buttermilk until combined. Whisk dry ingredients into wet ingredients. Stir in diced apple and bacon.

    heat oil in lg skillet, over medium-high heat. Scoop 1/4 cup batter into skillet. Cook until bubbly, flip and continue cooking until light brown. Reheat syrup and serve over pancakes.
