Ingredients
- 1/2 medium sweet potato, cut into 1/2
- 1 teaspoon olive oil, extra-virgin
- 1/4 cup red bell pepper, chopped
- 1/4 cup onion, chopped
- 4 x large egg whites, beaten
- pepper, to taste
- 1 cup melon, cubed
How To Make zumba egg & sweet potato hash

Step 1Steam or microwave sweet potato until tender. They should still be slightly firm. Heat oil in a saute pan; add sweet potato, peppers & onion. Saute over medium low heat for 5 - 6 minutes. Add egg whites, continuously stirring until they are cooked to your liking. Season with pepper. Serve with melon on the side.
