Ingredients For zumba egg & sweet potato hash

1/2 mdsweet potato, cut into 1/2

1 tspolive oil, extra virgin

1/4 cred bell pepper, chopped
-
1/4 conion, chopped
-
4 x lgegg whites, beaten
-
pepper, to taste

1 cmelon, cubed
How To Make zumba egg & sweet potato hash

1Steam or microwave sweet potato until tender. They should still be slightly firm. Heat oil in a saute pan; add sweet potato, peppers & onion. Saute over medium low heat for 5 - 6 minutes. Add egg whites, continuously stirring until they are cooked to your liking. Season with pepper. Serve with melon on the side.
