Ingredients For zumba egg & sweet potato hash

  • 1/2 md
    sweet potato, cut into 1/2
  • 1 tsp
    olive oil, extra virgin
  • 1/4 c
    red bell pepper, chopped
  • 1/4 c
    onion, chopped
  • 4 x lg
    egg whites, beaten
  • pepper, to taste
  • 1 c
    melon, cubed

How To Make zumba egg & sweet potato hash

  • 1
    Steam or microwave sweet potato until tender. They should still be slightly firm. Heat oil in a saute pan; add sweet potato, peppers & onion. Saute over medium low heat for 5 - 6 minutes. Add egg whites, continuously stirring until they are cooked to your liking. Season with pepper. Serve with melon on the side.
