2 smcorn tortillas

1 tspolive oil, extra virgin

2 tsponion, chopped

2 Tbsptomato, chopped

2 Tbspblack beans
-
4 x lgegg whites, beaten

1/4 mdavocado, diced
-
pepper, to taste
How To Make zumba breakfast tacos
-
1Preheat olive oil in a saute pan over medium low heat. Saute onions until softened, about 2 - 3 minutes. Add tomatoes & black beans to pan & saute another 2 minutes. Add egg whites to the pan & stir continuously until cooked through. Season eggs with pepper. Spoon 1/2 of the eggs into each tortilla & top with avocado.
