Living close to the border of Mexico has it's advantages. In this region, Texas and Mexico, come together in a perfect blend of culture and great food. These taco's are good to eat anytime of day, however, in our home they are a breakfast favorite and are easy to prepare. Enjoy, or as they say in Mexico, Disfrute!

Ingredients For tex mex chorizo and egg taquito's

  • 12
    flour tortillas
  • 5 oz
    pork, beef, or chicken chorizo
  • 8
    eggs
  • salsa of your choice

How To Make tex mex chorizo and egg taquito's

    Heat skillet on med high heat and heat tortilla's a minute or two on each side. Lay on a thick kitchen towel and cover with another thick kitchen towel to keep warm while cooking the chorizo.

    Cook the chorizo on medium heat in a skillet approximately 5 minutes, stirring to keep from burning.

    Turn the heat to medium and add the eggs to the chorizo. Stir and mix well.

    Cook until the eggs are done. Put the mixture on a warm tortilla and fold over. This mixture will make 12 Taquito's. Serve with salsa.
