Ingredients For scrambled egg secrets

3 x lgeggs

1 pinchkosher salt

1 pinchblack pepper

3 - 4 Tbspheavy cream

1 Tbspbutter, unsalted

1 - 2 slicevelveeta cheese (optional)
How To Make scrambled egg secrets

1Whisk the eggs, salt, pepper, cream together until light & foamy.

2Add butter to a nonstick skillet & place over high heat. When butter bubbles (1 minute), pour eggs in center of pan (that'll force butter to the edges - where it's needed).

3Stir slowly with spatula. When curds form, drop the heat to low & shift from stirring to foldiing the curds over on themselves while gently shaking the pan with your other hand. HINT: Get the eggs out of the pan before they're done - they will finish cooking on your plate.

4When no more liquidous eggs is running around pan, turn heat off & gently transfer to a warmed plate. Let eggs rest 1 minute before serving. If using cheese, place over eggs now - quickly.
