Scrambled Egg Sandwich

Many years ago when money was tight, I was out of lunchmeat, kids were hungry, what was I going to do. Had the bread and the eggs so I thought what the heck, make it into a sandwich. Needless to say the kids loved them and I have been making them ever since for them and friends. You can vary this sandwich in so many ways, of course,depending on the supplies on hand. The recipe I give is for two, just adjust ingredients to your needs.

4 Tbsp
miracle whip or mayo
butter or margarine

Directions Step-By-Step

Start scrambling eggs and while they are cooking start toasting the bread.
When toast is ready, butter and add the salad dressing or mayo to both pieces. (helps hold the eggs on sandwich)
When eggs are done, divide between the two sandwiches, close it up and enjoy.

ADD ONS: Depending on supplies on hand feel free to add 1-1/2 strips of bacon per sandwich, a slice of american cheese per sandwich. Feel free to add onions, mushrooms, tomatoes, zuchinni or whatever to the eggs. Just don't forget to put the salad dressing or mayo on the sandwich.
