1 cwater

1/2 clovemilk, skim
-
1/4 tspsalt
-
1/3 cquick cooking grits
-
1/4 ccheddar cheese, shredded

2 tspolive oil, extra virgin

2 Tbsponion flakes, dehydrated

1tomato, diced
-
3 x lgeggs
-
3 x lgegg whites
-
6 Tbspheavy cream
-
1/2 tspthyme, dried

1/8 tsppepper
How To Make onion & tomato egg scramble on grits squares

1Spray a 8" square baking dish with cooking spray. In a medium saucepan, add water, milk, 1/8 tsp salt; bring to boil over medium high heat. Slowly add in grits. Reduce heat to low & cook; stirring constantly until grits are thick & smooth, about 5 minutes. Remove from heat & sitr in 1/2 of the cheese. Spread grits mixture evenly into prepared pan; let cool 10 minutes. Cut grits into 8 squares.

2Heat 1 tsp oil in large skillet over medium heat. Add grits squares & cook until lightly browned, 4 - 5 minutes per side.

3Heat remaining 1 tsp oil in 2nd large skillet over medium heat. Add onion & cook; stirring occasionally until softened, about 5 minutes. Add tomatoe & cook another 3 minutes.

4Whisk eggs, egg whites, heavy cream, thyme, pepper & remaining salt in medium bowl. Add egg mixture to skillet & scrable until set but still moist, about 3 - 4 minutes. Serve egg scramble on top of grits squares. Sprinkle with remaining cheese.
