1Drain artichokes, rserving 2 tbsp liquid. In bowl, combine artichokes, onion, green pepper and ham. Toss w/ reserved liquid to coat.
2Spray a lg skillet w/ cooking spray, place over med-high heat. Add artichoke mix to skillet. Cook over medium heat, stirring for about 8 mins. Remove from heat.In lg bowl, combine eggs, water, salt and pepper. Whisk until frothy.
3Heat a lg skillet med-high heat. Add butter. Melt and swirl to coat pan. Add egg mix to skillet. Reduce heat to medium. Stir egg mix gently for 1-2 mins. Stop stirring and cook until eggs are set. Spoon filling onto one 1/2 of omelette. W/ spatula, lift and fold opposite side of omelette over filling. Invert onto plate and gently cut into 2.
