A family friend taught me to make this dish. I like to serve it for breakfast. Dry tortillas are good to use,as they crisp easily. Use as many tortillas and eggs as you need and just enough tomato sauce to color the eggs,don't drown them. Make sure to use hot tomato sauce,it makes the difference! I like Patio brand.

pinch tips: How to Crack an Egg with One Hand


canola oil
corn tortillas
small can mexican hot tomato sauce
salt and pepper,to taste
shredded cheese of your choice,i like jack or pepper jack
salsa, chunky
sour cream

Directions Step-By-Step

Cut tortillas into 8 triangles.Heat oil in skillet. Saute tortillas until crisp,stirring constantly. Add eggs,stir while scrambling,add hot tomato sauce,add cheese,season with salt and pepper.Remove from heat. Serve hot. Top with salsa and sour cream.Sprinkle with cilantro.
