Lo-cal sausage, egg and cheese roll-ups

I make these low-fat roll-ups for a quick, delicious breakfast, or as a snack.

Ingredients

1/2 c
egg beaters egg substitute
2
mushrooms, sliced
1/4 c
chopped red bell pepper
1/4 c
chopped green bell pepper
2 Tbsp
chopped red onion
1/2 c
torn baby spinach leaves
2
turkey sausage patties, cooked and crumbled
1/4 c
reduced-fat, shredded cheddar cheese

whole wheat tortillas

Directions Step-By-Step

Spray a lg skillet w/ cooking spray. In lg bowl, scarmble together egg beaters, veggies and sausage.

Pour mix into skillet. Cook, stirring often to scramble. Add cheese, and stir until melted. Transfer to a bowl.

Heat each tortilla in skillet on both sides until warmed. Fill tortillas evenly w/ filling.
I serve w/ a splash of hot sauce.
