6 jimmy dean heat 'n serve
55% less fat turkey sausage patties
6 low fat colby jack or cheddar sticks
splash of skim milk per egg cup
fresh spinach
fresh basil
fresh chives
garlic and onion powder
black pepper

Annette's Notes:

There are several variations of this recipe and when making these, they are so versatile. I came up with a version that is low in carbs, calories and fat. The fun thing is you can play around with the ingredients and make a few different kinds per pan. That way you have a wide variety to choose from each morning. Make 12 or 18 at a time and you have breakfast ready to grab, pop in the microwave to heat up and go. It doesn't get any easier than that!

Directions

Preheat oven to 350°. Spray a 12 cup muffin pan well with Pam.

*NOTE*I do this next step one at a time so I know that I'm getting the correct amount of turkey/cheese per muffin cup.

In a glass measuring cup or small bowl, crack one egg at a time. Beat to break up yolk with a fork and add just a splash of skim milk. Add pepper, garlic and onion powder and mix well.

Cut one thawed sausage patty in half and chop into pieces. Cut one cheese stick in half and cut into pieces as well. Add both into egg mixture.

Chop spinach, basil and chives. Add to egg/meat/cheese mixture. Mix to combine all ingredients.

Pour into greased muffin tin. Repeat 11 more times. Bake in preheated 350° oven for 20-25 minutes or until eggs are set. Mine are always done at 25 minutes.

Remove from oven and serve or let cool and then store in an air tight container in the refrigerator until ready to serve. Reheat in microwave on medium-medium high heat for about 2 minutes. Microwave oven times and temps may vary. Enjoy!

These look pretty good, Annette. Do you have a problem with the eggs sticking in the muffin pans? I made something like this once and greased the 'cups' well; but the eggs stuck so bad that I had to soak the muffin tins for DAYS and scrub my knucles to the bone to get them clean. It was very frustrating. I swore I would never do that again...well, at least not until I got some NON-STICK cup cake pans. LOL 3/14/13

Nope Rose, not a problem at all. They pop right out and don't leave any residue behind at all. Hope you'll get to try them again sometime. They are sure worth it and such a quick way to have breakfast ready for a weeks worth of meals. Well for us it's almost 2 weeks as we only eat one at a time.

Thanks Cassie. Yeah there are many different versions of these. I just wanted to share a healthier version since this is the lifestyle change we have made. They are sure great to make ahead that's for sure.
