With small children,40 years ago, I was running out of nutritional any time food. My friend suggested this tasty, warm food. With its interesting appearance, it was a winner and still is with my Granddaughter!

Ingredients For jonny one eye

  • 4 lg
    eggs
  • 8 slice
    bread - swirl, whole wheat, oatmeal, your choice
  • 1 tsp
    sea salt
  • 1 tsp
    ground pepper
  • 1 Tbsp
    natural maple syrup or your choice
  • 1/2 c
    skim or whole milk

How To Make jonny one eye

  • 1
    SEPARATE some Eggs (leaving enough yokes for each serving) SAVE yokes individually in cracked egg shell or any place PLACE whites & remaining yokes with milk into short, wide bowl for soaking) ADD Sea salt & Fresh ground pepper

    CUT out circle in middle of bread. (you can use the top of a small glass, bottle cap, etc.) SAVE Holes for later

    SOAK bread until bread is full with egg. (If using thin sliced bread, careful the bread does not get too soaked. I lift to fry pan using a spatula

    HEAT Iron fry pan ADD soaked bread. BROWN one side ADD 1 yoke in hole & flip
  • 5
    FINISH cooking to desired yoke's hardness (can flip and cook other side again) PLATE USE saved hole to dab at 'Johnny's eye'
