Ingredients

2 slice brioche loaf, each about 3/4-inch thick(or french bread)
1 Tbsp unsalted butter
2 large eggs
1/8 tsp fine sea salt
Garnishes: chopped chives, fresh black pepper

Pat's Notes:

A great morning treat that's super easy to prepare, but special enough for breakfast in bed!
This idea is from Whole Foods.
A great idea for Valentine's Day breakfast or brunch.

 

Directions

Using a large heart shaped cookie cutter(2 1/2-3-inch ), cut out a heart from the center of each slice of bread. Reserve hearts.

Melt butter in a large skillet over medium heat. Add the bread slices and the heart cutouts to the pan and cook until slightly toasted. Turn slices and cutouts; carefully break an egg into the center of each slice.
Cover the skillet and cook until the egg white is just set and the yolk is cooked to your liking, about 3-4 minutes.

Carefully transfer a slice and a cutout to each of 2 plates and snip some chives over the top. Sprinkle with salt and pepper. Serve immediately.

Try other cookie cutters for various holidays. Tree,star,pumpkin, shamrock,bunny,flag...etc

Cute! I have a heart shaped pancake maker, but I am lousy at making them, so I use it sometimes to make heart shaped fried eggs. I like this idea.

I grew up having these we just called them egg in the nests and I still like to make them. they are so yummy I just use white bread and lots of butter!! So yummy and easy
