Ingredients For fried eggs with sweet potato hash

2 Tbspcoconut oil, divided

2 mdsweet potato or yam, diced into 1/2" cubes

1yellow onion, diced

4nitrite/nitrate free sausages, sliced

2 mdbell pepper, diced

8 lgeggs

freshly ground black pepper
How To Make fried eggs with sweet potato hash

1In a large skillet, heat 2-4 teaspoons coconut oil over medium heat.

2Add the onions and sweet potatoes, and sauté for 5 minutes.

3Add the sausages and continue to cook until sausages are browned and sweet potatoes are slightly softened.

4Add bell peppers and 1-2 Tbs of water.

5Cover and cook for 15 minutes or until the potatoes are completely soft, stirring frequently.

6Meanwhile, fry eggs in 1-2 teaspoon coconut oil.

7Season with freshly ground black pepper and serve over sweet potato hash.
