- bacon, sausage, ham, smoked sauage, canadian bacon, or any meat you like. or any combo of meats.
- 4 medium
- potatoes, large dice
- 1 c
- cheese-any kind you want, monterey jack, cheddar, swiss, velvetta, sandwich slices..whatever you like or have on hand, as long as it will melt.
1Heat a large skillet, add diced onions and chopped up bacon.(or depending on what meat you choose, you may need to add a little oil)
2Once the meat begins to cook, add potatoes. Add S&P, (you may need more or less depending on what kind of meat you choose) cook over medium to med. high heat, stirring often, til potatoes are tender inside and have some color on them.
3Scramble eggs in a bowl, and add to skillet, stirring til eggs are done to your liking..this won't take very long..don't walk away.
4Turn off heat, and add shredded or sliced cheese. You can cover and let it melt on top, or you can stir it in and let it melt all through. Either way is Delicious.
5Serve and watch it disappear.
