Ingredients

1 avocado
2 eggs- small or medium
pinch paparika
pinch pepper
pinch salt
add a dab of hot sauce after baking to each for some extra heat.

Borrowed this idea from a friend. It's a beautiful and tasty combo! I would recommend serving with whole grain toast or a bowl of fruit.

Cut Avocado in half length wise. Remove pit.

Crack one egg into each side of Avocado halves.

Sprinkle with salt, pepper and paparika.

Bake for 15 minutes @ 400 degrees.

Maybe my avacado was smaller than average, but medium egg ran over. Guess I will try small next time. After an additional 8 minutes (23 total) yolk was still runny ans some white was barelyy fixed. I finished off in microwave. Added some grated cheese and sriracha sause. Tasted quiet good.
