This is just a simple down home cooking recipe.(I know, I know, everyone knows how to cook this; I just love these eggs!). I made breakfast for dinner tonight and served my favorite scrambled eggs along w/ bacon and biscuits. My Mom always made eggs with onions and served w/ optional ketchup. When I began cooking I added the tomatoes; eggs scrambled w/ onions and tomatoes is still my favorite way to scramble eggs. I love the simplicity of the dish and the pure goodness of the sautéed onions and sweet tomatoes. Both really compliment the eggs and make a eye pleasing presentation.

Ingredients For eggs scrambled with onion and tomatoes

  • 8 - 10
    cherry or plum tomatoes, halved or quartered or
  • 1 lg
    tomato, diced
  • 1 md
    onion, diced or
  • 3 - 4
    green onions, chopped
  • 4 lg
    eggs, beaten
  • optional: fresh chopped basil
  • optional: several tbls. grated cheese

How To Make eggs scrambled with onion and tomatoes

    Place onions in oiled skillet and cook on medium heat until onions start to change color ( about 5 minutes). Add tomatoes to skillet an cook with onions about 2 more minutes.

    Beat eggs and pour into pan. Add chopped basil if using. Cook and stir until eggs are @ desired consistency and doneness. While hot, sprinkle with grated cheese, if using.
