Ingredients

  • 3/4 cup thick white sauce, cooled
  • 8 hard cooked eggs, ground
  • 3 tablespoons chopped pimiento
  • 1 tablespoon snipped parsley
  • 1 tablespoon minced onion
  • 1 teaspoon salt
  • 1 teaspoon prepared mustard
  • 2 slightly beaten eggs
  • 1 1/4 cups fine cracker crumbs

How To Make eggs croquettes

  • Step 1
    INGREDIENTS FOR THICK WHITE SAUCE 2 1/2 Tbsp butter 3 Tbsp all purpose flour dash of salt 3/4 c milk
  • Step 2
    Combine White Sauce and next 6 ingredients; mix well. Chill for several hours
  • Step 3
    Form into croquettes, using 1/4 cup for each. *Mix beaten eggs and 2 tablespoons water. Roll croquettes in crumbs; dip into egg mixture; roll in crumbs again.
  • Step 4
    Chill 20 minutes. Fry in deep hot fat ( 365 F ) till golden brown, about 2 to 3 minutes. Drain on absorbent paper towels.
  • Step 5
    *Or form into patties, coat and chill. Cook in skillet in a little butter. Brown the patties about 3 minutes on each side
