Ingredients
- 3/4 cup thick white sauce, cooled
- 8 hard cooked eggs, ground
- 3 tablespoons chopped pimiento
- 1 tablespoon snipped parsley
- 1 tablespoon minced onion
- 1 teaspoon salt
- 1 teaspoon prepared mustard
- 2 slightly beaten eggs
- 1 1/4 cups fine cracker crumbs
How To Make eggs croquettes

Step 1INGREDIENTS FOR THICK WHITE SAUCE 2 1/2 Tbsp butter 3 Tbsp all purpose flour dash of salt 3/4 c milk

Step 2Combine White Sauce and next 6 ingredients; mix well. Chill for several hours

Step 3Form into croquettes, using 1/4 cup for each. *Mix beaten eggs and 2 tablespoons water. Roll croquettes in crumbs; dip into egg mixture; roll in crumbs again.

Step 4Chill 20 minutes. Fry in deep hot fat ( 365 F ) till golden brown, about 2 to 3 minutes. Drain on absorbent paper towels.

Step 5*Or form into patties, coat and chill. Cook in skillet in a little butter. Brown the patties about 3 minutes on each side
