Ingredients

3/4 c
thick white sauce, cooled

hard cooked eggs, ground
3 Tbsp
chopped pimiento
1 Tbsp
snipped parsley
1 Tbsp
minced onion
1 tsp
salt
1 tsp
prepared mustard

slightly beaten eggs
1 1/4 c
fine cracker crumbs

Directions Step-By-Step

INGREDIENTS FOR THICK WHITE SAUCE
2 1/2 Tbsp butter
3 Tbsp all purpose flour
dash of salt
3/4 c milk

Combine White Sauce and next 6 ingredients; mix well.
Chill for several hours

Form into croquettes, using 1/4 cup for each.
*Mix beaten eggs and 2 tablespoons water. Roll croquettes in crumbs; dip into egg mixture; roll in crumbs again.

Chill 20 minutes.
Fry in deep hot fat ( 365 F ) till golden brown, about 2 to 3 minutes.
Drain on absorbent paper towels.

*Or form into patties, coat and chill.
Cook in skillet in a little butter.
Brown the patties about 3 minutes on each side
