reduced-fat, shredded cheddar cheese
Plcae bacon in lg skillet, over med-high heat. Cook bacon until crisp. Remove bacon to paper towels to cool. Crumble bacon and set aside.
Add potatoes to bacon grease in skillet. Season potatoes w/ garlic salt, salt and pepper. Cook, stirring occasinally until potatoes are tender.
Add bacon crumbles to skillet. Pour beaten eggs over potatoes. Cook eggs until firm. Sprinkle potato mix w/ cheese. Cover, cook until cheese is melted.
