mini breakfast pizzas!

I LOVE Schwan's BrightStarts. I love pretty much anything Schwan's, but it's so pricey, I can't afford it. So I decided to make a really simple copycat recipe. I'm going to see if they freeze well, but if not, it makes a great breakfast or dinner for four people. :)

Ingredients For mini breakfast pizzas!

  • CRUST
  • 3 c
    bisquick
  • 2/3 c
    hot water
  • 2 Tbsp
    veg. oil or olive oil
  • TOPPINGS
  • 1/2 lb
    breakfast sausage, i use 1/2 a jimmy dean original chub
  • 2-3 Tbsp
    all purpose flour
  • 1/2-1 c
    milk
  • 2
    eggs, scrambled
  • 1/2 c
    real bacon bits
  • 1/2-3/4 c
    colby jack cheese, grated
  • 1/2 c
    finely shredded mozzarella

How To Make mini breakfast pizzas!

    Preheat oven to 400. Mix bisquick, water, and oil, stirring only twenty strokes or so. Just make sure it's mixed. Let the dough rest for about ten minutes.

    Fry sausage on med-hi until fully cooked. Reduce heat and sprinkle flour over sausage and then add enough milk to cover the bottom of the pan. Stir mixture and increase heat again until mixture starts bubbling lightly. Stir constantly until gravy has thickened to your liking. Add more milk or flour as needed. Remove from heat.

    Once dough is done resting, form a ball, squish it down and cut it into four equal portions. On a lightly greased baking sheet(you might have to use two, since I have gigantic baking sheet), shape the four portions into flat, round little pizza shapes.

    Top each with 1/4 of the sausage mixture, then each with 1/4 each of the scrambled eggs, sprinkle the bacon bits on top of each pizza. Then top each with 1/4 of your colby jack and 1/4 of your mozzarella.

    Place in the oven for 12-14 minutes until bottom of pizzas are golden brown(check with spatula). Enjoy. :)
