Ingredients For christmas morning fritatta

  • 1 Tbsp
    olive oil
  • 1 c
    frozen broccoli florets, thawed
  • 1/2
    of a lg red bell pepper, thinly sliced
  • 1/4 c
    chopped onion
  • 1/2 tsp
    dried italian seasonings
  • 1/4 tsp
    salt
  • 1/8 tsp
    pepper
  • 10 lg
    eggs, beaten
  • 2 Tbsp
    milk
  • 2 Tbsp
    grated parmesan cheese

How To Make christmas morning fritatta

    Place oil in lg skillet over medium heat. Add broccoli, red bell pepper, onion, italian seasoning, salt & pepper. Cook, stirring until broccoli is crisp-tender.

    In lg mixing bowl, combine eggs and milk, beat well. Pour egg mix over veggie mix in skillet. Cook, lifting to let eggs flow under cooked eggs, until nearly set.

    Remove skillet from heat. Sprinkle w/ parmesan cheese. Cover, let stand for 4 mins to set. Cut into wedges to serve.
