Ingredients

1 small head of brocoli
1 tsp butter or oil
1-2 large eggs
1/8-1/4 tsp italian seasoning
1/8 c shredded cheese (optional)

Robin's Notes:

Experiment with seasonings. I like Italian Seasoning with eggs, it really punches up their flavor, but you can use whatever herbs you like. You can also use other add ins like diced tomatoes or ground meat (for meat eaters)and personalize this absolutely scrumptious and nutritious dish!!

 

Directions

Get your egg(s) out of fridge and let them be warming. Maybe even set in a bowl of tepidly warm water to warm them up.

Wash and rinse broccoli head. Cut into super small pieces for sauteing. Use only the florets, the other pieces are too tough for this dish.

Heat butter in non-stick pan ( I prefer Cast Iron) . SAutee Broccoli on Medium heat for about 7-10 minutes until crisp tender.

Crack egg(s) into broccoli saute and let set a minute. Sprinkle seasoning on once egg has begun to set a bit, then start stirring to get a good scramble going.

Once egg(s) are nearly completely set, sprinkle on cheese if desired. When fully set,serve.

I meant 1/8 tsp of Italian Seasoning, or to taste...
