Morning arrived and as usual I had requests for breakfast from my husband and brother. I originally thought breakfast burritos. What could be faster then just rolling up your filling in a tortilla? Breakfast tacos that's what! No hassle of making sure the burrito shell doesn't rip, just pile in your ingredients and breakfast tacos! You can switch up the ingredients to suit your taste. Also vegetarian bacon is great instead of the real stuff if your looking to cut out the meat. Enjoy!

Ingredients

6 slice
bacon

eggs
1 tsp
salt
1
avocado
1/2 c
pepper jack cheese, shredded

flour taco size tortillas
1/4 c
salsa

Directions Step-By-Step

Cook bacon in a non-stick skillet, drain set aside

Whisk eggs with cream and salt in a bowl until bubbly

Add eggs to the skillet the bacon cooked in. Cook on med - low stir in 2 tablespoons salsa

Heat tortillas up for 20 seconds, or until they bubble. I wrap mine in damp paper towels before I microwave them. The paper towel keeps them from having crispy edges and drying out.

Top each tortilla with eggs, avocado, bacon and cheese. Serve with salsa on the side
