10-12 count package flour tortillas
1 lb bulk sausage, mild or spicy-cooks choice
1 large onion, chopped
8-10 eggs, beaten
2 c cheese, shredded, any kind-cooks choice

Everyone has a great breakfast burrito recipe. This is my favorite. Eggs scrambled in sausage drippings?! WOOHOO! These are quick to prepare and good any time of day. Great to grab when you're on the run, thus the name.
EDITED 10/12/13: In ingredients list please add after chopped onion: 1 medium green pepper or several green chilies, chopped fine. May substitute canned green chilies.

Sprinkle tortillas with water. Stack and seal in foil. Warm in 325 degree F oven while sausage is cooking. Cook sausage with onion until sausage is crumbly. Remove sausage from skillet and remove tortillas from oven.

Stir eggs into sausage drippings and cook until set; stirring frequently. Add sausage. Spoon into tortillas. Sprinkle with cheese. Roll tortillas.
Serve with picante sauce or salsa. Hot or mild-cooks choice!

Serving Note: If you are a chili head, go for spicy sausage, pepper jack cheese, and hot salsa!

I have made a similar breakfast burrito before. They are good in general. So, I am sure your's is plenty good! I used to eat an Egg McMuffin, almost every morning, on the way to work. When, I wasn't working any more, I started buying Canadian bacon & making myself homemade McMuffins. I still love them. :) Pinching your's to have the measurements handy. Mine was just an individual one.

One of my favorite breakfast foods, and I have enjoyed them at my Breakfast On The Beach parties! A friend who has twin boys brought them one morning, and they were the best. Thanks for sharing the recipe.
