Baked Prosciutto and Egg Cups (low Carb)

I found this in Rachel Ray's Magazine and wanted to share it with fellow low carbers :)

Ingredients

6 slice
prosciutto thinly sliced
2 oz
fresh mozzarella cheese torn into small pieces
3 large
basil leaves ,torn
6
eggs
freshly ground pepper

Directions Step-By-Step

Coat 6 cups of muffin tin with cooking spray and fit each with a prosciutto slice

Divide half the cheese and basil among cups

Crack an egg into each and nestle remaining and basil around eggs

Bake at 375 until set, about 15 minutes then let rest for 5 minutes

Season with pepper. Run knife around cups to unmold
