Ingredients

  • 1 dozen eggs
  • 8 slices bacon
  • 1/2 cup mayonnaise, fat-free
  • 2 tablespoons Dijon mustard
  • 2 scallions, thinly sliced
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt & pepper

How To Make bacon & eggs - satan style

  • Step 1
    Start a with a dozen hard boiled eggs done this way: https://www.justapinch.com/recipes/breakfast/egg-breakfast/hard-boiled-eggs-in-the-oven.html?p=3. Peel each one & slice lengthwise from top to bottom.
  • Step 2
    Cook bacon in skillet until crisp. Drain. Crumble into tiny pieces.
  • Step 3
    Carefully take yolks out of whites & place into a medium bowl. Add mayo, mustard, scallions, salt & pepper; mash & mix together. Add bacon pieces & mix to combine.
  • Step 4
    Fill a pastry bag fitted with large star tip, or 2 spoons, pipe or spoon filling into egg whites. Sprinkle each with paprika. Chill at least 2 hours or until set & ready to serve.
