To save time,look for mixed diced bell pepper in the produce section of the grocery store.

I think you could make and bake these the night before and just pop in microwave in the morning.
(I HAVE NEVER DONE IT THOUGH)

Ingredients

12 slice
bacon,crisp cooked and cut crosswise into thirds
6 large
eggs
1/2 c
diced bell pepper
1/2 c
shredded pepper jack cheese
1/2 c
half and half
1/4 tsp
salt
1/4 tsp
black pepper

Directions Step-By-Step

Preheat oven to 350 F.
Lightly spray 12 standard(2 1/2")muffin cups with nonstick cooking spray.

Place 3 bacon slices in each prepared muffin cup,overlapping in bottom.

Beat eggs,bell pepper,cheese,half & half,salt and pepper in medium bowl until well blended.
Fill each muffin cup with 1/4 cup egg mixture.

Bake 20-25 minutes or until eggs are set in center.
Run knife around edge of each cup before removing from pan.
