I must say, I was skeptical about trying a chicken sausage that was flavored sweet (it's not overly sweet) & it sure did surprise me. Now I buy my apple maple chicken sausage at a local butcher shop so I get it w/o casing but most grocery stores carry this now in where the other sausages & bacons are located. It is very delicious and was perfect to make as a quesadilla. Little side note: My husband did not like the onions sliced in here and asked that next time I dice them small. He is not much of an onion fan but I enjoyed them. Next time I will take a pic of the sweet topping quesadilla.

Ingredients For apple maple sausage breakfast quesadilla

  • 6-8 oz
    apple maple chicken sausage, ground & remove casing
  • 4 md
    eggs
  • 2 Tbsp
    milk or cream
  • 1/4 c
    onions, sliced or diced (approx)
  • slice
    extra sharp cheddar cheese, sliced or shredded
  • 2 Tbsp
    pimentos
  • 2 - 4 Tbsp
    tomatoes, diced
  • 2 lg
    tortillas, flour
  • salt & pepper
  • TOPPINGS FOR QUESADILLA
  • ........SWEET
  • 1 md
    apples, sliced
  • 1 1/2 Tbsp
    butter
  • maple syrup
  • 1/2 tsp
    cinnamon
  • whipped cream, sweetened
  • ....OR SAVORY
  • 1 scoop
    salsa, chunky
  • 4 Tbsp
    sour cream
  • 1 Tbsp
    cilantro or parsley, fresh & chopped

How To Make apple maple sausage breakfast quesadilla

    Whisk your 4 eggs with some milk, add 1 to 2 tablespoons of pimentos or sliced roasted red's. A pinch of beau monde seasoning in with the eggs...gently fry them up in a little olive oil. Add salt & pepper to your liking. Pan fry up your "chicken" apple maple sausage with sliced or diced onions. Add your diced tomatoes last just to warm them up. Place your eggs first on the tortilla then sausage mixture.

    Add your slices of extra sharp cheddar cheese on top and then score the tortilla where you want your slices and place on top.

    In your grill maker or pan with a press to cook your quesadilla for about 5-7 minutes till cheese is melted.

    While grilling up quesadilla decide if you want sweet or savory topping. FOR SWEET TOPPING: add your sliced apples to the pan with melted butter and fry them till tender. Add a little maple syrup and cinnamon too. Spoon over one of the slices of quesadilla and top with cream. Sprinkle a little more cinnamon to top. FOR SAVORY: Add a spoonful of salsa, some sour cream and cilantro or parsley for garnish.

    Slice in four pieces and add your toppings. ---I forgot to add my cilantro. :-)
