too simple pancakes

This was an accident. My wife wanted pancakes and while she had Bisquick and eggs, she found she had no milk in the frig. She substituted Almond milk and man oh man, the pancakes were outstanding! This small change doesn't seem to qualify as a "recipe" however, it made a wonderful batter. The pancakes were tender and light and tasted great!

Ingredients For too simple pancakes

  • 2 c
    bisquick
  • 2
    eggs
  • 1 1/2 c
    almond milk

How To Make too simple pancakes

    Wisk together all ingredients in a bowl. Let rest for 5 minutes.

    Heat a lightly greased grill or large cast iron frying pan to medium heat. Deposit 1/3 to 1/2 cup of batter. When bubbles almost stop appearing on the surface, flip the pancake over and let cook until the pancake slides on the pan.

    Serve right from the grill or pan or cover and hold in a 200 degree oven until ready to serve. You will need lots of butter and maple syrup!
