Ingredients For chocolate chip peanut butter pancakes

  • 1 c
    (140 grams or 5 ounces) all-purpose flour
  • 2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 2 Tbsp
    granulated sugar
  • 1
    large egg
  • 1 c
    milk
  • 1/4 c
    peanut butter
  • 1/3 c
    chocolate chips ( mini's work best in my opinion but use what you have/like best)
  • TOPPING:
  • peanut butter
  • maple syrup (optional, if needed/wanted)

How To Make chocolate chip peanut butter pancakes

    In a large bowl sift together flour, baking powder and salt. Add sugar. Set aside.

    In a separate medium bowl, whisk together the egg, milk and peanut butter.

    Make a well in the dry ingredients and pour in the wet ingredients. Stir until combined and moistened. Don’t over mix. Fold in chocolate chips.

    Heat a griddle or a skillet over medium heat. Coat with cooking spray (or oil/butter). For each pancake, drop 1/4 cup of batter onto skillet.

    Cook 1-2 minutes, until surface of pancakes have some bubbles. Flip carefully and cook 1-2 minutes more. Transfer to a plate and cover loosely with aluminum foil to keep warm.

    Make sure to coat the skillet with cooking spray before every pancake or batch of pancakes so they don’t stick.

    TOPPING: Make as much as you like (for lavish pouring or a light drizzle). Either just slowly melt the peanut butter while watching closely and stirring, then use it plain. Or, once the peanut butter is melted you may find that it's too thick (especially if using a brand with nothing added - just peanuts). If so add some maple syrup slowly in small amounts while stirring until it reach the consistency that you want.

    NOTE: It's actually easiest to make the topping first and just keep it just warm while making the pancakes so that it will be ready when you are.
