Throwing these together with the use of your left over mashed potatoes is great! Perfect for Breakfast or as a side at dinner. Whats great about these is you can put any seasoning you like....even add cheese! They are a soft potato cake, not dry or pasty. If you like a firmer cake, add more flour. YUMBO!

Ingredients For potato cakes

  • 1 1/2 c
    cold mashed potatoes
  • 1 lg
    egg
  • 1 clove
    garlic, minced
  • 1 sprig
    scallion, diced up including the green
  • 1 Tbsp
    chopped fresh parsley
  • 1/4 c
    flour
  • OPTIONAL ADDS
  • grated cheese or your favorite seasoning

How To Make potato cakes

    Prepare all ingredients

    Mix everything together in a medium size bowl. (I make my mashed potatoes with the skins on. )

    In a medium skillet, drizzle olive oil and one tablespoon butter
  • 4
    Spoon drop the size of cake that you desire making sure to flatten them a little bit. They will be sticky, I flatten a little bit after turning them.

    Brown both sides. Serve with whatever you like, I just put butter on top...YUMBO!
