In a large, shallow bowl, whisk together egg and nondairy milk. Stir in a 1/4 tsp. vanilla and a pinch of salt. Dredge bread in the egg mixture, turning over several times to coat both sides.
Meanwhile, melt a tablespoon of coconut oil in a large skillet over medium heat. When the pan is hot, add the soaked bread slices and cook for 3-5 minutes, turning once halfway through, until the bread is cooked throughout.
