Clean-Eating Vegetable Chic-Pea Tacos

Lately, I have to admit; I've been eating vegetarian style. What I am discovering is 1) I like the taste of veggies, and 2) you can make them taste like almost anything. I made these tacos out of HUNGER ! LOL

I wanted a one pan meal, because I wasnt feeling so good, can't sleep. This is what I came up with. You can use what ever veggies you have around the kitchen. I DID. Do this dish YOUR WAY.

Stove Top

Ingredients

I USED THESE VEGETABLES, BUT USE WHAT YOU'D LIKE, AND THE AMOUNT YOU WANT

onion
celery
garlic
chick peas
tomato
mushroom caps
Tbsp
chiles, canned and mild
handfull
baby spinach
taco seasoning mix
cumin
taco shells
salt and pepper (to taste)

Directions Step-By-Step

In nonstick pan add... celary, onion, peppers, (all veggies that take longer to cook)

Cook until tender.

Add ALL OTHER INGREDIENTS,
sprinkle with cumin, salt and taco seasoning.

Simmer 3 min.

Serve on taco shell (I added a little hummus)
