Pacific Northwest Breakfast Toasts (Serves 2)

- whole wheat english muffins
- 4 oz
- tillamook extra sharp cheddar cheese
- 4 oz
- cooked salmon
- 1/2 tsp
- fresh lemon juice
- fresh ground black pepper
1Separate English muffin halves and toast in a toaster. Meanwhile, slice the cheese and set aside. Reheat your salmon using a microwave, if desired. Mash the avocado with the lemon juice.
2Prepare eggs as you wish but, poaching is recommended!
3To assemble: Top an English muffin half with sliced cheese, mashed avocado, and salmon. Place a cooked egg on top and season with salt and pepper. Replace the top of the muffin.
