Cauliflower Egg Scramble

- 1 large
- head cauliflower cut into small florets
- 8 large
- 4 Tbsp
- 1/2 c
- fresh chives chopped
- salt and pepper to taste
1Cook the cauliflower in salted boiling water until tender. Drain well.
2Beat egg together and set aside.
3Add butter to large skillet. When butter is melted and hot add the cooked cauliflower. Pour the eggs over top and cook stirring until eggs are done. Stir in chives and season with salt and pepper
