FRITTATA BREAKFAST WINNER. w/ step by step photos

I decided to make an FRITTATA instead of the usual coffee cake to serve her.
She loved it. Now she has good nourishment as she is walking in todays IRISH PARADE!
Needless to say,there was no leftovers!
Feel free to add or take away what you want. Have fun ...play with this recipe to your liking.

Actually this is a great dish for any meal ...any time!!
- 1 large
- white baking potato
- 6-8 large
- 6 slice
- bacon, cooked
- 1/2 tsp
- black pepper ( enough salt is in the bacon)
- 2 small
- colorful mini peppers sliced
- 1/2-3/4 c
- sour cream
- 4 small
- green onions chopped
- 3/4 c
- cheddar cheese, grated or diced.
- add love and an irish blessing!
Place on a paper towel -lined plate.
When cool crumble into1/4 inch pieces, set aside.
Cook potato in bacon fat over medium heat-high heat until browned and tender.
Remove and let cool.
Add the cut up mini peppers, add to the skillet and mix.
ADD the egg mixture, reduce heat to low, and cook 10 minutes.
