My mom made this recipe for years. I don't know where she got it but I suspect she made it her own in many ways. I have made this recipe for 20 years, often bringing a pan to work where it was always gobbled down. I hope you enjoy it!

Ingredients

3 c
zucchini, diced skin on
1 c
bisquick
1/2 c
onion, chopped
3 to 4
garlic bulbs, minced
2 Tbsp
parsley, chopped
1/2 c
mozzarella cheese, shredded
1/2 c
cheddar cheese, shredded
4 large
eggs, beaten
1/2 c
vegetable oil
1/2 Tbsp
salt and pepper or to taste
butter or spray for baking dish

Step-By-Step

1Preheat oven to 350 degrees F.

2Butter or spray a 9" x 13" Baking dish.

3In a bowl, combine all ingredients, stirring lightly until evenly combined.

4Pour into baking dish and bake at 350 degrees F for 25 to 30 minutes.
