My friend, Tanya aka Chocolate Chic made this for my family when they were visiting. My son, who hates oatmeal will only eat this. My husband has me make it every winter so he can have it for breakfast before going off to work. We like to use the flavored coffee creamers on our baked oatmeal. French Vanilla is the favorite of the family. I know there are many recipes like this out there, but I think this one is our favorite. It is such a versatile recipe. Add nuts, cranberries or whatever your family would like to throw in and it will be personalized to your tastes.

Ingredients For yummy baked oatmeal

    eggs
  • 1 c
    brown sugar (..or turbinado sugar)
  • 1/2 c
    butter, melted
  • 3 c
    rolled oats (not quick oats)
  • 1/2 c
    chopped nuts (optional)
  • 2 tsp
    baking powder
  • 1 tsp
    salt
  • 1/4 tsp
    nutmeg
  • 1 c
    milk
  • 1/4 c
    maple syrup
  • 1 tsp
    vanilla
  • 1 tsp
    cinnamon

How To Make yummy baked oatmeal

    Preheat oven to 350 degrees

    In a bowl, whisk eggs. Add melted butter and sugar. Whisk again.

    Combine the dry ingredients; oats, baking powder,salt, cinnamon, and nutmeg. Then whisk together and pour into the egg, sugar and butter mixture.

    Add milk and maple syrup and mix together. Add nuts or dried fruits at this point.

    Pour into a greased 9x13 baking pan and bake for 30 minutes. Serve hot with your favorite coffee creamer or carnation's evaporated milk (which is my preference).

    This can be mixed up the night before and placed in the oven the next morning while getting ready for school or work.

    ***SPECIAL NOTE*** We like this thick so I will usually double the recipe for the 9x13 pan.
