Ingredients

2 c
commercial seasoned croutons, crushed
1/4 c
butter, melted
10 oz
package frozen chopped spinach, thawed and drained
1 c
small-curd cottage cheese
4 oz
monterey jack cheese, cubed
1/4 c
parmesan cheese, grated
1/4 c
onion, chopped
3
eggs, beaten
2 Tbsp
sour cream
1 clove
garlic, minced
1/2 tsp
salt
2 Tbsp
parmesan cheese, grated

Step-By-Step

1Combine crushed croutons and melted butter; stirring well. Firmly press the crumb mixture evenly on the bottom and up the sides of a 9-inch pie plate; set aside.
2Combine the spinach and the next 8 ingredients, stirring well. Spoon the spinach mixture into the prepared crust.
3Bake, uncovered at 350 degrees for 35 minutes or until set and lightly browned. Remove from the oven, and sprinkle with 2 tablespoons Parmesan cheese. Let stand 5 minutes before serving.
