" Rockin' the Ranch" Eggs

|1 can(s)||(4 ounces) green chilies (true chili heads may want to use more)|
|1 lb||sharp cheddar cheese, shredded|
|1 lb||monterey jack cheese, shredded (for that extra kick, use pepper jack!)|
|1 Tbsp||ap flour|
|2/3 c||evaporated milk|
|2||ripe tomatoes, sliced thin|
My Hubs could eat eggs every day, scrambled or fried, and he's happy! I need variety (green chilies and a boatload of cheese, anyone?) to keep me happy. I had been experimenting and this recipe is what we both like. I never gave them a name. The Hubs called them Ranch Eggs because "they seem cowboyish w/ a spicy flair." Ok, works for me!
NOTE: Easily doubled; use 13 X 9 inch dish.
