My Hubs could eat eggs every day, scrambled or fried, and he's happy! I need variety (green chilies and a boatload of cheese, anyone?) to keep me happy. I had been experimenting and this recipe is what we both like. I never gave them a name. The Hubs called them Ranch Eggs because "they seem cowboyish w/ a spicy flair." Ok, works for me!

Ingredients For " rockin' the ranch" eggs

  • 1 can
    (4 ounces) green chilies (true chili heads may want to use more)
  • 1 lb
    sharp cheddar cheese, shredded
  • 1 lb
    monterey jack cheese, shredded (for that extra kick, use pepper jack!)
  • 4
    eggs, separated
  • 1 Tbsp
    ap flour
  • 2/3 c
    evaporated milk
  • 1 tsp
    salt
  • 1 pinch
    pepper
  • 2
    ripe tomatoes, sliced thin

How To Make " rockin' the ranch" eggs

    Preheat oven to 325 degrees F. Place 1/2 of green chilies into bottom of buttered medium sized baking dish. Sprinkle cheeses on top of chilies.

    Beat egg yolks. Add flour and milk. Beat egg whites and fold into egg yolk mixture. Add salt and pepper. Pour over cheese and press with fork into cheese.

    Bake @ 325 degrees F for 1/2 hour. Put thinly sliced tomatoes and remainder of chilies over top. Bake additional 1/2 hour. Serve with your favorite hot, buttered biscuits and a cup of coffee. YUM! NOTE: Easily doubled; use 13 X 9 inch dish.
