Ingredients

1 9" deep dish pie plate
1 homemade or prepared pie crust
1-1/4 c fresh or frozen broccoli - roughly chopped
1/4 c onions, chopped
3 strips crisp bacon - crumbled
5 eggs
1 3/4 milk ( % of your choice)
1 1/2 c cheese, shredded - mixture of romano, cheddar, asiago, etc..
1 tsp butter, melted
salt and pepper to taste

Vicki's Notes:

Trying to use up some garden vegetables from 2012 season, I made this the other evening and turned out delicious.

 

Directions

Saute broccoli and onion in a little oil, just crisp/tender.

In medium bowl, beat eggs, add broccoli, onion, bacon.

Mix in melted butter, and milk.

Spread 1/2 amount of shedded cheese in the bottom of raw - empty pie shell. (cheese mixture of your choice - I used what I had already in the frig.)

Pour the egg mixture slowly on top of the bottom layer of cheese.

Spread the remaining 1/2 shredded cheese on top of the pie filing.

On bottom oven rack - Bake 350 degrees for 45 minutes or until knife inserted in pie comes out clean.

Cover your pie crust edge with foil, or crust protector if its getting browned too fast - if you don't like dark crust.

Remove from oven to let it settle for a few minutes before cutting.

Serve has you like with sides.

Welcome to JAP! Love quiche but always avoided making it cause I thought it was a difficult dish to make. Yours sounds quick & easy and looks delicious. Pinched and will be making soon. Thanks for posting.

Its a very light meal. If you have leftovers, it microwaves well, and the crust doesn't get soggy or hard.
