A winning combination for a delicious hearty breakfast for holidays, family gatherings or a special breakfast at home.

Prepare the casserole the night before serving and pop it in the oven while coffee is brewing the following morning.

Ingredients

3 c
simply potato hash browns or south west flavored diced potatoes
1 c
diced ham
2 c
montery jack cheese
1 bunch
scallions - chopped
4
eggs- beaten
1 can(s)
evaporated milk
3/4 c
sweet red pepper
1/2 tsp
thyme, dried

Step-By-Step

1Grease a casserole dish
Place bag of simply potatoes on bottom of casserole, flatten with fingers to make a crust of sorts in the pan
2Cover potatoes with ham cubes,red pepper, scallions and 1 1/2 cups of cheese
3Combine the eggs with evaporated milk and thyme
pour over vegtables and meat. Cover tightly and place in fridge over night.
4Bake in preheated 350 oven for 45-50 minutes UNCOVERED or until set
Let cool in casserole for 10-15 minutes before slicing
