i saw this on facebook, i thought it looked good and it IS!!!! i especially like that it only takes 6 eggs, yet still makes a large amount. it also freezes well.

Ingredients For facebook breakfast casserole

  • 1/2 lb
    sausage
  • 1/2 lb
    breakfast sausage
  • 1 tsp
    hot sauce
  • 4 c
    thawed frozen hashbrowns
  • 1 lb
    cheddar cheese, shredded
  • 6
    eggs
  • 1 sm
    finely diced onion
  • 1 1/2 c
    cottage cheese
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/2 tsp
    garlic powder

How To Make facebook breakfast casserole

    brown sausage in skillet, remove and drain break up into bite sized pieces
  • 2
    cook bacon in skillet, remove, drain on paper towels break into small pieces
  • 3
    saute onion in bacon/sausage grease
  • 4
    in a large bowl combine the thawed hashbrowns, hot sauce, salt, pepper, garlic powder and cottage cheese. stir well to combine. reserving 1/2 cup of each, add cheese, sausage, onion and bacon to the bowl and stir well.

    stir in 6 beaten eggs. pour into greased 9x13 inch pan. or 2 8x8 pans, or 1 small skillet and 2 small freezer pans. you can freeze smaller amounts or bake it all at once.

    top with the reserved bacon, sausage and cheese

    bake uncovered at 350* for 40 min.
