Ingredients

4 c cheese, shredded
2 c milk
1 8oz can(s) diced ortega chiles
4-5 lg eggs
1 heaping c bisquick

For years we had this at work for mornings on pot-luck days. Why wait for lunch? Start early!

 

Directions

Spray a 13X9X2 pan with Pam cooking spray. Put cheese in the pan and top with the chiles. Mix milk, eggs and Bisquick in a blender for 1 1/2 to 2 minutes until frothy. Pour over chile and cheese mixture.

Bake in a 400 degree oven for 15 minutes. Lower heat to 375 degrees and continue baking for an additional 30 minutes.

Finely chopped ham can be added on the chile layer for a complete breakfast quiche. There has never been any left-overs.

I love making this with chopped veggies, browned sausage or bacon. The possibilities have always been endless. As well as being an ez breakfast (lunch or dinner) when company arrives.

Glad you enjoyed it Cin! My college daughter has mid-terms tomorrow and I'm making it in the morning with ham for a good breakfast for her. I'm going to try and remember to get a picture for the recipe page. :)
