6 large croissants, cut open
1 pkg bacon
8 slices provolone cheese
1 c cheddar cheese, shredded
8 eggs
2 Tbsp milk
2 Tbsp butter

Flaky croissants, two kinds of cheese, bacon and eggs make up this scrumptious breakfast casserole.
Perfect for a Sunday brunch to begin your day of watching football with some friends, for a potluck at the office, or for a fun family gathering at the breakfast table on the weekend. For whatever occasion, this is sure to be a big hit.

 

Directions

Preheat oven to 375 degrees. Lightly grease the bottom of a 9x13 baking dish.

Cook bacon and set aside on a plate with a paper towel to soak up the grease. Once cooled, break into 1 inch pieces (approximately).

Place the bottom halves of the croissant in the dish, trying to get them to be as close together as possible.

Spread provolone and cheddar over the tops of the croissants. Bake in oven until cheese begins to melt (about 5 minutes).

Remove from oven; spread the bacon evenly over the top of the cheese.

In a medium bowl, whisk the eggs and milk until well blended. Pour over the top of the bacon and croissants. Bake for 15 minutes, or until egg is cooked. Remove from oven.

Lightly butter the outside of the croissant tops and place atop the casserole. Place back in oven for 5 minutes until croissants are toasted slightly. Remove and let sit for 10 minutes. Cut pieces with a knife before serving with a spatula.

Yum. I was looking for something different for Christmas morning. Easy put together. I think I would add more seasoning to the eggs next time. Everyone seemed to enjoy them! Two thumbs up.

This looks pretty awesome! I am going to put it on my list of things to make for my sunday school class. We have some vegetarians, so I will either put the bacon on half or leave it off completely.

What a small world... I have been frantically searching for something to make for our Easter Morning Brunch. I was about to give up and then I found your recipe- that looks AMAZING!!! Darci thank you for sharing this great recipe. I made a version of this for Christmas morning using cocktail croissants, shredded cheddar and pepper jack cheeses (for a kick) sausage, bacon, sauteed bell pepper, onion, zucchini & mushrooms. Everyone loved it! The best thing was that when you have leftovers they reheat quickly in the microwave. I can't wait to make this again and again.

We make these almost every weekend but we just cut the croissants in half, fill them with scrambled eggs,fried bacon and cheese and microwave them for 30 secs each. They are so easy and tasty! Mushrooms are good in them too!
