Ingredients

12 medium
eggs
3 slice
ham or breakfast meat of choice
2 medium
onion
2 medium
green peppers
9 large
hash brown potato patties or 1 large bag of loose hash browns
1 pkg
shredded cheese of your choice, i use cheddar but you can you swiss and mozerella
1/2 c
milk

Directions Step-By-Step

Before you go to bed, slice the onion and separate the rings, Cut up the green pepper into slices. Chop the ham into pieces. Mix together eggs and milk like you are going to make an Omelet and set aside. Grease your crockpot with some type of oil. Place a layer of Hash Browns on the bottom of the oiled crockpot, then add some of the separated onion slices, then layer some of the green pepper slices, sprinkle some of the cheese on top of this then layer some of the ham pieces. Start all over again and layer the hash browns, onions, peppers, cheese and ham. When you have made as many layers as you like, take the eggs and milk mixture and pour down over the layers. Put your lid on the crockpot turn on low and go to bed. Make toast in the morning and spoon your breakfast out of the crock pot.

    Wow this is right up my alley! I am always so pressed for time in the morning and can never make my hubby a good breakfast before I head out the door. I think this has many possibilities!     It is great for holidays and when you have company because you don't have to be in the kitchen cooking you can enjoy breakfast with everyone else. You could even have it for dinner.

    I have all the ingredients now just need to go home and get the other stuff out of the freezer. I am really looking forward to this. I am going to cut it in half only because it is just my husband and I but will double it next month when I get my company for my son's wedding. We will have at least 12 people staying with us and I also have to prepare the menu for the rehearsal dinner so this is going to be a huge help to me! I might change it the second time I make it just to have a variety! Thanks again. Will let you know how it turns out.

    good luck I have changed it up also because my sister came and does not like green pepper so I used mushrooms instead.

    Yum! Love mushrooms I swear I could eat them every single day! Have you changed the meat at all like used cooked sausage?
